About the Author

Jennifer Adkins Ernst wrote the first edition of Untangling in 1996 while serving as the President of the board of the Metro DC Affiliate of the Society for Nutrition Education. The Affiliate had a career workshop for members that included a panel of nutritionists with a wide variety of careers. Jennifer was so struck by the variety that she designed a chart to illustrate the depth and breadth of possibilites in nutrition and the book grew from there.

After receiving her Masters degree in Nutrition Education from Teachers College, Columbia University in 1990, Jennifer worked for the Expanded Food and Nutrition Education Program (USDA), the Food and Nutrition Information Center (USDA), Montgomery College (MD) and as a consultant while raising 3 children. She is currently adjunct faculty at American University where she develops and teaches online classes for the Certification in Nutrition Education, and a Scholar-in-Residence developing a middle school nutrition education intervention for low-income students.

She is also a certified Web site developer combining skills and experience related to education with information architecture and technology.
